Arabic gum comes from the trunk exudates of the genus Acacia in the leguminous family, so it is also called Acacia gum. The main components of gum arabic are macromolecule polysaccharides and their calcium, magnesium and potassium salts.

Arabic gum

Arabic gum mainly includes gum aldehyde, galactose, glucuronic acid and so on.

Arabic gum is a kind of safe and harmless thickener, which is naturally solidified in the air. 

Light white to yellowish brown translucent bulk, or white to orange brown granular or powder, is a polymer electrolyte with molecular weight of 22-300,000. 

Arabic gum is odorless, tasteless and flammable. It can gradually dissolve into acidic viscous liquid in water. 

After some time, the viscosity decreases, and the solubility is about 50%(W/V), insoluble in ethanol. 

Arabic gum forms a stable coagulation layer with gelatin or albumin. 

Free Arabic acid is obtained by precipitating it with acidic alcohols.

Food industry

1.Arabic gum can also be widely used in beverage production, such as in the production of concentrated soft drink juice, it can stabilize flavor and essential oil.

2.Arabic gum is also used in candy making, like traditional hard (wine) gum, soft sweets, and can also be used as foam stabilizer for cotton candy.

3.Arabic gum is a carbohydrate polymer that can be partially degraded in the large intestine. It can supplement the human body with cellulose. Compared with starch and maltodextrin, its energy value is less than half.

4.Arabia gum has good emulsifying properties. It is especially suitable for oil in water emulsion system. It is widely used as emulsifying stabilizer in emulsified flavor. It also has good film forming properties. As a microcapsule film forming agent, it can be used to transform essential oils or other liquid materials into powder form, which can prolong flavor quality and prevent oxidation, and is also used as flavor carrier for baking products. Arabic gum can hinder the formation of sugar crystals. It can be used as an anti-crystallizing agent in candies to prevent crystal precipitation. It can also effectively emulsify the cream in milk candy and avoid spillover. It can also be used for chocolate surface lighting, making chocolate soluble only in mouth and insoluble in hands. In carbonated drinks such as cola, Arabic gum is used for emulsification, dispersing essential oils and oil-soluble pigments to avoid their essence during storage. Oil and pigments float up to form a ring around the bottleneck; gum Arabic is also used as a haze agent in beverages with vegetable oils and resins to increase the diversity of beverage appearance.

5.Nutritionally, gum arabic produces little heat and is a good water-soluble dietary fiber, which is used in health products, candies and beverages. Arabic gum also has the function of lowering blood cholesterol in medicine. Arabic gum is also widely used in other industries. The applications in food industry can be summarized as follows: natural emulsifying stabilizers, thickeners, suspensions, adhesives, film-forming agents, polishers, water-soluble dietary fibers, etc.

Printing industry

Printing plate is mainly polished with Arabic glue.

Arabic gum is a solid crystalline substance. When it is soaked in water, it will absorb water and swell, and finally become a viscous colloidal solution. When the liquid colloid is rubbed on the printing plate and the water evaporates, the liquid state is restored to the original solid state and adsorbed on the plate. Its function is to cover the plate with a hardened film after the gel is dried, and to isolate the plate from the air, so as to achieve the purpose of preventing oxidation.

Arabic gum contains Arabic acid (X-COOH), which is a good cleaner to remove greasy surface. The effect of the surface rubbing is greater when it is dried.

After rubbing the Arabic gum on the plate, its glue contacts with the inorganic salt layer of the plate, forming a better hydrophilic film, improving the hydrophilicity of the plate.
